Team led by Rodrigo Espinosa, Agricultural Engineer and Oenologist by the University of Chile, with wide experience in Chile, The United States and Castilla La Mancha.

Nose

Primary aromas of fresh fruits, elegant notes of herbs and tropical notes (pineapple and passion fruit)

Pairing

Ideal with all kinds of fresh fish, fried fish or seafood. It can be enjoyed as an aperitif and with a wide variety of tapas.

Terroir

Grapes harvested in the area of Mendavia in plots located between 300 and 600 metres above sea level. The perfectly balanced vineyards allow the grapes to be harvested at optimum ripeness.

The low yields per hectare make it possible to obtain a concentrated and aromatic wine.

Vinification

Short maceration followed by delicate pressing at low pressure to obtain a clean and aromatic must. This is followed by static racking with pectolytic enzymes and then the racked must is fermented with selected yeasts at a controlled temperature of between 15 and 18°C.
